2 ripe bananas
1 cup mascarpone cheese
1 cup heavy cream
1/2 cup sugar
1/2 cup brewed coffee, cooled
1 teaspoon vanilla extract
2 packs ladyfinger cookies
2 tablespoons cocoa powder
Instructions
In a bowl, mash the bananas until smooth.
In another bowl, whip the heavy cream and sugar until stiff peaks form.
Fold the mascarpone into the whipped cream, then add the mashed bananas and vanilla extract.
Dip each ladyfinger briefly in the coffee, then layer them in a dish.
Spread half of the banana mixture over the ladyfingers.
Repeat the process for another layer of ladyfingers and banana mixture.
Dust the top with cocoa powder.
Chill in the refrigerator for at least 4 hours or overnight before serving.

This dessert can be made a day in advance for better flavor.
