- 2 pounds beef chuck roast
- 2 cups beef broth
- 3 dried guajillo peppers
- 2 dried ancho peppers
- 1 white onion
- 4 cloves garlic
- 1 tablespoon ground cumin
- 1 tablespoon ground oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 12 corn tortillas
- 1 cup chopped fresh cilantro
- 1 lime
- Soak the dried peppers in hot water for 15 minutes.
- In a blender, combine soaked peppers, beef broth, onion, garlic, cumin, oregano, salt, and black pepper; blend until smooth.
- In a large pot, add beef and pour the blended sauce over it. Cook on low heat for 3 hours until tender.
- Remove meat, shred it, and set aside.
- Heat tortillas in a skillet, add shredded meat, and top with cilantro and lime juice before serving.
Notes
