  • 2 pounds beef chuck roast
  • 2 cups beef broth
  • 3 dried guajillo peppers
  • 2 dried ancho peppers
  • 1 white onion
  • 4 cloves garlic
  • 1 tablespoon ground cumin
  • 1 tablespoon ground oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 12 corn tortillas
  • 1 cup chopped fresh cilantro
  • 1 lime

Instructions

  1. Soak the dried peppers in hot water for 15 minutes.
  2. In a blender, combine soaked peppers, beef broth, onion, garlic, cumin, oregano, salt, and black pepper; blend until smooth.
  3. In a large pot, add beef and pour the blended sauce over it. Cook on low heat for 3 hours until tender.
  4. Remove meat, shred it, and set aside.
  5. Heat tortillas in a skillet, add shredded meat, and top with cilantro and lime juice before serving.

Notes

  • For extra flavor, marinate the beef overnight with the sauce.
  • Serve with a side of consomé for dipping.
