  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 4 slices turkey bacon, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through.
  3. Add the turkey bacon to the skillet and cook until crispy.
  4. Stir in the bell peppers, onion, and garlic; cook until vegetables are tender.
  5. Sprinkle with Cajun seasoning and mix well.
  6. Pour in the heavy cream and bring to a simmer.
  7. Stir in the Parmesan cheese until melted and combined.
  8. Add the cooked pasta, and toss to coat evenly. Season with salt and black pepper to taste.
  9. Serve hot, garnished with additional Parmesan if desired.

Notes

  • For extra spice, add more Cajun seasoning or a pinch of cayenne pepper.
  • You can substitute shrimp for chicken for a seafood twist.
