Crockpot Creamy Coconut Chicken Tikka Masala

  • 2 pounds chicken thighs, boneless and skinless
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon garam masala
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 1 tablespoon olive oil
  • 1 cup cilantro, chopped for garnish

Instructions

  1. In a crockpot, combine chicken, coconut milk, curry powder, garam masala, garlic, ginger, chili powder, salt, diced tomatoes, onion, and olive oil.
  2. Cook on low for 6-8 hours or until chicken is tender.
  3. Before serving, shred the chicken in the sauce and stir to combine.
  4. Garnish with fresh cilantro and serve with rice.
