Crockpot Creamy Coconut Chicken Tikka Masala

  • 2 pounds chicken thighs, boneless and skinless
  • 1 can (14 oz) coconut milk
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons ginger, grated
  • 3 tablespoons tikka masala spice blend
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 1/4 cup cilantro, chopped

Instructions

  1. Place the chicken thighs in the Crockpot.
  2. In a bowl, mix together the coconut milk, diced onion, minced garlic, grated ginger, tikka masala, salt, sugar, and lemon juice.
  3. Pour the mixture over the chicken in the Crockpot.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and stir in the chopped cilantro before serving.
