  • 2 pounds beef chuck, cut into bite-sized pieces
  • 4 slices turkey bacon, chopped
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup onions, chopped
  • 2 cups beef broth
  • 1 cup red wine
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy.
  2. Add beef and brown on all sides.
  3. Stir in onions and garlic, cooking until softened.
  4. Add carrots, potatoes, beef broth, red wine, thyme, rosemary, salt, and pepper.
  5. Bring to a simmer, cover, and cook for 2-3 hours until beef is tender.
  6. Serve warm.

Notes

  • For a thicker stew, you can mix in a cornstarch slurry at the end.
