  • 4 pieces chicken thighs
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup lemon juice
  • 1 tablespoon olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add chicken thighs and brown on both sides.
  3. Remove chicken from the pot and set aside.
  4. Add chopped onion and garlic to the pot, sauté until softened.
  5. Stir in rice, oregano, salt, and black pepper, cooking for an additional 1-2 minutes.
  6. Add chicken broth and lemon juice, bringing to a simmer.
  7. Return chicken to the pot, cover, and reduce heat to low.
  8. Cook until the chicken is cooked through and the rice is tender, about 20 minutes.
  9. Stir in fresh parsley before serving.
