  • 1 pound chicken breast, diced
  • 3 cups cooked rice
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 large eggs

Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add garlic and ginger, and sauté until fragrant.
  3. Add chicken and cook until browned and fully cooked through.
  4. Stir in mixed vegetables and cook until tender.
  5. Pushing the chicken and vegetables to one side, scramble the eggs in the skillet.
  6. Combine all ingredients in the skillet, then stir in the cooked rice and soy sauce. Mix well.
  7. Garnish with chopped green onions before serving.

Notes

  • For added flavor, consider marinating the chicken in soy sauce and garlic for at least 30 minutes before cooking.
  • Feel free to use any vegetables you like or have on hand.
