  • 1 cup long-grain rice
  • 2 cups chicken broth

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with garlic powder, onion powder, paprika, salt, and pepper, and place them in the skillet.
  3. Cook for about 5-7 minutes until browned.
  4. Add the rice to the skillet, followed by the chicken broth and BBQ sauce.
  5. Stir well to combine, then bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes or until the rice is cooked.
  7. If using, add mixed vegetables during the last 5 minutes of cooking.
