  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 2 cups diced carrots
  • 2 cups diced celery
  • 6 cups chicken broth
  • 1 cup lentils
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 bay leaf
  • 2 cups chopped kale

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onions and garlic to the pot and sauté until soft.
  3. Stir in carrots and celery, cooking for an additional 5 minutes.
  4. Pour in chicken broth, add lentils, thyme, pepper, and bay leaf; bring to a boil.
  5. Reduce heat and let simmer for 30 minutes until lentils are tender.
  6. Stir in kale and cook until wilted. Crumble the bacon back into the pot.
  7. Serve hot, garnishing with fresh herbs if desired.
