  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley

Instructions

  1. Boil the potatoes in salted water until tender, then allow them to cool and dice.
  2. Cook the turkey bacon until crispy, then crumble.
  3. In a bowl, combine sour cream, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper.
