- 2 pounds beef chuck roast
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 3 dried guajillo peppers, seeds removed
- 3 dried ancho peppers, seeds removed
- 4 cups beef broth
- 12 corn tortillas
- 1 lime, cut into wedges
- 1 cup chopped cilantro
- 1 cup diced onions
- In a large pot, brown the beef chuck roast over medium heat.
- Add onions, garlic, cumin, oregano, and thyme. Stir until fragrant.
- Toast guajillo and ancho peppers in a dry skillet until fragrant, then add them to the pot.
