  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 4 ripe bananas, sliced
  • 20 vanilla wafers

Instructions

  1. In a saucepan, combine milk, cream, sugar, cornstarch, and salt. Whisk together over medium heat until boiling and thickened.
  2. In a separate bowl, whisk the eggs and stir in some of the hot mixture to temper them. Return the egg mixture to the saucepan, whisking constantly.
  3. Cook for another minute until thick, then stir in vanilla extract.
  4. In a dish, layer vanilla wafers, sliced bananas, and the pudding mixture. Repeat layers until ingredients are used.
  5. Chill for at least 4 hours before serving.
