- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 4 cups milk
- 4 large eggs, separated
- 1 teaspoon vanilla extract
- 1 box Nilla Wafers
- 4 ripe bananas
- 1 cup heavy cream
- In a saucepan, whisk together sugar, flour, and salt. Gradually stir in milk.
- Cook over medium heat, stirring constantly, until the mixture thickens.
- In a separate bowl, whisk egg yolks and add a little of the hot mixture to temper them.
- Stir the egg yolk mixture back into the saucepan and cook for a few more minutes.
- Remove from heat and stir in vanilla extract.
- In a large dish, layer Nilla Wafers, sliced bananas, and pudding mixture. Repeat layers.
- In a separate bowl, beat egg whites until stiff peaks form. Spread over the top of the pudding.
- Bake at 350°F for 10-15 minutes until golden brown. Let cool before serving.
