  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. In a separate bowl, beat the cream cheese until smooth.
  6. Fill each muffin cup halfway with the pumpkin batter, add a dollop of cream cheese, and then cover with more batter.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before serving.

Notes

  • For a twist, add chocolate chips or nuts to the batter.
