Quinoa and Veggie Stir-Fry Recipe

A delicious and healthy quinoa and veggie stir-fry that the whole family will enjoy.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 carrot, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring the vegetable broth to a boil and add the quinoa.
  3. Reduce heat, cover, and simmer for about 15 minutes until quinoa is fluffy.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add bell pepper, zucchini, carrot, and garlic. Sauté until tender.
  6. Add cooked quinoa to the skillet.
  7. Stir in soy sauce and sesame oil; mix well.
  8. Season with black pepper and serve hot.

Notes

  • This dish can be modified with seasonal vegetables.
  • For added protein, consider adding tofu or chickpeas.
