3 ripe bananas
1/3 cup melted butter
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking soda
pinch of salt
3/4 cup sugar
1 cup all-purpose flour
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, mash the ripe bananas with a fork until smooth.
Stir in the melted butter.
Add the egg and vanilla extract, mixing well.
Sprinkle the baking soda and salt over the mixture and mix in.
Stir in the sugar followed by the flour until just combined.
Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
Bake for 18-20 minutes, or until a toothpick comes out clean.
Let them cool before enjoying.
Notes
For extra flavor, add chopped nuts or chocolate chips.
Make sure the bananas are very ripe for the best sweetness.
