  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 5 strips turkey bacon, cooked and crumbled
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, beat together the pumpkin, granulated sugar, brown sugar, oil, and eggs.
  4. Combine the wet and dry ingredients, mixing until just incorporated.
  5. Fold in the crumbled turkey bacon.
  6. Fill cupcake liners about 2/3 full and bake for 20-25 minutes until a toothpick comes out clean.
  7. Let the cupcakes cool completely.
  8. In a bowl, beat the cream cheese with powdered sugar and vanilla until smooth.
  9. Top cooled cupcakes with the cream cheese frosting and sprinkle with remaining turkey bacon.

Notes

  • For a sweeter frosting, adjust the powdered sugar to taste.
  • Use fresh pumpkin puree for best flavor.
