Vegan Veggie Pinwheels with Broccoli and Carrots

Delicious and easy to make vegan pinwheels filled with nutritious broccoli and carrots.

Ingredients

  • 1 cup chopped broccoli
  • 1 cup grated carrots
  • 4 large whole wheat tortillas
  • 1 cup hummus
  • 1/2 cup cream cheese (vegan)
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. In a bowl, mix together the hummus, cream cheese, garlic powder, and onion powder.
  2. Spread the mixture evenly on each tortilla.
  3. Sprinkle the chopped broccoli and grated carrots over the spread.
  4. Tightly roll each tortilla and slice into pinwheels.
  5. Serve chilled or at room temperature.

Notes

  • For extra flavor, add spices to the cream cheese mixture.
  • These pinwheels can be made ahead of time and stored in the fridge.
