Witch’s Cauldron Beef Stew

Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 cups carrots, sliced
  • 2 cups potatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the tomato paste, thyme, and bay leaf.
  5. Pour in the beef broth and add carrots and potatoes.
  6. Bring to a boil, then reduce heat and simmer for 2 hours.
  7. Season with salt and pepper before serving.

Notes

  • For a thicker stew, mix 2 tablespoons of flour with a little water and stir into the stew before serving.
