8 ounces udon noodles
4 slices turkey bacon
1 cup broccoli florets
1/2 cup sliced bell pepper
1/4 cup sliced green onions
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon garlic, minced
1 teaspoon ginger, minced
Instructions
Cook udon noodles according to package instructions. Drain and set aside.
In a large skillet, cook turkey bacon over medium heat until crispy. Remove and chop into pieces.
Add broccoli, bell pepper, and green onions to the skillet. Stir-fry for about 3-5 minutes until tender.
Stir in the minced garlic and ginger, cooking for an additional minute.
Add the cooked udon noodles and turkey bacon back into the skillet.
Pour soy sauce and sesame oil over the mixture. Toss to combine and heat through.
Remove from heat and serve hot.
Notes
Feel free to add any other vegetables you like.
You can substitute turkey bacon with regular bacon if preferred.
